Irish cheese: made with a passion
For the first time CAIS, the Irish cheesemakers association, will be represented at Taste of Dublin in June. Here everyone can see and taste the enormous selection of this handmade speciality product that Irish farmers are proud of. Ireland's cheese lovers will be presented with the best of Irish cheese at the one platter.
Always wanted to know which herd of animals produced the milk of your favourite Irish farmhouse cheese? And what they eat? Or maybe you're interested in the person who makes that cheese? And why the flavour and structure of most cheeses changes with the seasons?
You can get all the answers at Taste of Dublin on June 14, 15, 16, and 17. For the first time, CAIS, the Irish Farmhouse Cheesemakers Association, will have a stand there. CAIS-members will be there to answer all your questions. Visitors can taste and buy the unique farmhouse cheeses that are made in Ireland.
Founded in 1983, CAIS now represents 36 Irish farmhouse cheesemakers. Each of them produces a unique product. Not alone is the cheesemaker himself responsible for the cheese, but also the type of animal, even the breed, their diet, and the soil type have their impact on the cheese. That makes every Irish farmhouse cheese unique.
All Irish farmhouse cheeses are made at a small scale with cow's, goat's and sheep's milk. Every year new cheeses are added to the well known range of Irish farmhouse cheeses. There are hard cheeses, soft cheeses, washed rind cheeses, and blue cheeses. Some mature for months, others are at their best at only a few days old. .
And even though they are all different, Irish farmhouse cheeses have one thing in common, they are all made with passion.
