CÁIS 25th Anniversary Celebrations

Cashel Palace Hotel, Cashel, Co Tipperary
Events on the day will include:
11 – 4pm Cheese Hall. A showcase of up to 40 Irish farmhouse cheeses. The showcase is open to the public with admission free of charge. Guests will be invited to sample a wide variety of cheese including blues, softs, wash rinds, goudas, cheddars, etc.
2 – 5pm Trade Workshops. A number of trade workshops will take place from 2.00pm, hosted by CÁIS. Workshops include:
- Standards & Schemes for Cheesemakers: a discussion on quality accreditation schemes for Irish Farmhouse Cheese i.e. SALSA and BRC, chaired by Paddy Berridge of Carrigbyrne Farmhouse Cheese.
- Cheese and Wine: Selection, Maturation and Taste, A Marriage of Craftsmanship and Skill. Workshop hosted by Mary Gaynor (Wset Dip) and Sarah Furno (Wset Dip) Cashel and Crozier Blue Cheese.
- Selection & Presentation of Cheese: an introduction to the different varieties of Irish farmhouse cheese (mould ripened, wash rinds, semi-hard and hard) and best practice in terms of selection and presentation in a retail environment.
5 – 8pm Evening Reception. An evening reception from 5.00pm to celebrate the achievements of Irish Farmhouse Cheesemakers. Guest speaker John McKenna, Bridgestone Food Guide.
